So last night, there I am, totally exhausted from working all day and
doing the winter to spring changeover in Chase and Hailey's
closet....and other household chores.
So, i look at the clock, its 630...hmmm, dinner? WTF am I gonna make? When you are Gf, you certainly cant just order a pizza and watch the kids eat it without wanting to snatch it from their grubby little hands and rub it in a sensual manner all over your body. (Ok, a little dramatic, but damn, i remember how good pizza tasted....)
So, I had some shredded chicken breast that I had made earlier in the week for my chicken pot pie (for the pot pie I made the "crust" with GF bisquick. Was the equivalent of putting biscuits on top of the pie, not as good as my version using pie crust, but delicious nonetheless. Next time I would buy several boxes of GF biscuick (be warned, EVERYTHING GF comes in minature doll house furniture size and costs a fortune). So, next time I would put a crust on the top and bottom, for that "pie" taste. it was good regardless, and the kids even ate it!!
The trick is SEASONING. Without seasoning any GF baked item will taste like nothing....so season away!! Just make sure you dont have some weird seasoning that isnt GF.
So, chicken pot pie, awesome. Back to last night (sorry for the rambles, but if you know me, this is how my freaking mind works, I am crazy). I made chicken salad, heavy on the seasoning, and here is what I used. Please dont ask for measurements, I dont really cook that way..
Chicken Salad on Lettuce Wraps (use bibb lettuce, they make great "boats" to hold the chicken salad.
cubed chicken (or canned)
grapes, sliced
celery sliced thin
pecans
craisins
vegenaise (see prior post about this AMAZING product)
poultry seasoning
basil
oregano
sea salt
pepper (lots, I have an addiction to pepper)
sage
dry mustard (just a tad)
white pepper
garlic powder
onion powder
I think thats all I put in there....
It was awesome, and the kids, again, loved it.
Now, for this weekend, I have a double challenge. I am GF and my friend is vegetarian. So, Im making vegetarian, GF lasagna. Havent decided yet if i am going to use squash and zuchinni as the noodles, or try to find some Gf lasagna noodles. SOOOO Wishing my vodka sauce was GF..makes the best lasagna.....
People ask me, how do you do it? Aside from the beer and pizza cravings its really not that bad. I try not to think about all the things I cant have, bc that would be depressing, instead, I try to think of ways to "cheat" or alter things that I love to make them GF.
Word of caution. The GF pizza at Donatos...yeah, its some sauce and pepperoni and cheese literally thrown on a plate. They claim there is some "rice" thing under it, but it must have dissolved prior to my consumption of it. I would have to order like four to even feel full. Save yourself the time and go to Mellow Mushroom or Uno's and get a real gf meal. Better yet, go to Carabbas, where they make a GF version of Chicken Bryan..OMG!!!!
Even Olive Garden has a GF pasta now!!
All right, done for the day I think. Monday I have my appt at the Cole Center to recheck vitamin D levels and thyroid levels. My hair feels thicker, my nails are stronger, and I swear my skin doesnt feel like dragon ass anymore....Im hopeful my levels are at least a little better....weight loss has slowed down, but Im doing this crazy cleanse, so maybe thats the reason. I only have a week or two left on the cleanse, but I feel better physically, so thats good. I will be getting back into the gym next week, and hopefully back to running, gonna start the C25k program over now that I have more energy...
