So last night, there I am, totally exhausted from working all day and doing the winter to spring changeover in Chase and Hailey's closet....and other household chores. So, i look at the clock, its 630...hmmm, dinner? WTF am I gonna make? When you are Gf, you certainly cant just order a pizza and watch the kids eat it without wanting to snatch it from their grubby little hands and rub it in a sensual manner all over your body. (Ok, a little dramatic, but damn, i remember how good pizza tasted....) So, I had some shredded chicken breast that I had made earlier in the week for my chicken pot pie (for the pot pie I made the "crust" with GF bisquick. Was the equivalent of putting biscuits on top of the pie, not as good as my version using pie crust, but delicious nonetheless. Next time I would buy several boxes of GF biscuick (be warned, EVERYTHING GF comes in minature doll house furniture size and costs a fortune). So, next time I would put a crust on ...

For those of you reading this, what follows is the treatment plan info for my current medical issues. There is alot, lol, but I hope this path will end where it is supposed to, with total body health!!! I had my treatment plan appointment last night with Dr. Jacobs at the Cole Center. It was enlightening and awesome. Its so wonderful to have a doctor actually listen to you and tell you what the course of action is and the intended outcome. There are some things that we are going to do right away and some things later. I dont know that I entirely understand everything that she said, but heres to me attempting to explain it! The first course of action that she started last week was to change my thyroid medication to armour instead of the synthroid I had been taking. I didnt really notice any difference, but that could be because I began the GF/Soy free diet around the same time. I have noticed increased energy, a moderate decrease in joint pain, but I still have...

I really thought this whole GF would be a lot harder than it has been. Last weekend we went to Dingle house which is totally not GF, for Amy's Suprise Bday Bash. I had wine and ordered a steak with fries, no sauce or added stuff. It was great! This weekend, Kira and I went to Sandusky to meet my friend Martha. A quick trip to Walmart and I got some GF snack foods and stuff for Kira. We stopped at Mellow Mushroom in Columbus for lunch, and i had the GF pizza. YUM~!!! We then had chipotle for dinner Friday night, and only a few modifications had to be made. For brunch we had the buffett at the waterpark, and for lunch I had string cheese, a lara bar and some GF pretzels. For dinner we went to Fridays and I had a steak. The last morning there we went to Cracker Barrell and I ordered off of their low carb menu. Eggs, bacon, and hasbrowns. Last night was the true test. So yesterday I had my first appointment with Dr. Cole at the Cole Center for Healing in Sharonville. I cannot tell you the feeling I had after leaving there. My frustration with traditional medicine has reached epic proportions, as I seriously do not just want a prescription; I want to know what is causing the problem, and fix it, without drugs if possible. The Cole Center for Healing is a little bit granola....there are some things there that are considered odd by some, but I went in with an open mind. They have you fill out extensive paperwork, exam you, and really listen to you. Dr. Cole was like an angel, I swear, he is so cool. He is concerned that I have several issues going on. He wants to do further testing and a couple of treatment things. 1. He was going to recommend the gluten free, soy free diet, and was ecstatic that I did that on my own and was doing so well. 2. Down 2.5 pounds!!! This is so exciting. My energy levels are insane. Cannot wait to see if my hair starts to get thicker, and stop falling out. Last night James made a GF stir fry dinner. We used liquid aminos instead of soy sauce, and I swear it tastes the same!!! We used basmati rice, zucchini, and onions. I marinated the chicken in honey, salt, pepper, and liquid aminos. It was delicious!!!! Still trying to incorporate more veggies and fruits into my daily diet. I was not exactly a healthy eater before, so this is a double challenge.
