This is kind of crazy. All this time Ive been beating my head against the wall and still gaining weight, I switch to GF and suddenly, the weight is falling off, I have increased energy, and mood is much better. I keep waiting for a crash, lol. Ive found there is a struggle to get enough protein, as the convienent GF foods are usually snack type food. Last night I had this fettucine alfredo GF frozen meal from whole foods, and it was delicious. I also steamed some zucchini and had a great dinner. I found myself CRAVING a piece of bread as if it was crack, so I did have a piece of UDI white bread, and found that it satisfied that craving, and wasnt bad at all... For breakfast today I had organic yogurt and UDI GF granola and cranberries. For lunch? GF pasta and sauce. For dinner I will be making stir fry, with veggies, amino's instead of soy sauce (tastes the same I swear) and basmati rice (GF). Super excited about this, and potential leftovers!! I have a...

Well, here we go...after being diagnosed with Hashimoto's Disease (an auto immune disease that is directly related to the thyroid) I have been doing my own research. I have realized that modern medicine is ONLY concerned with controlling your symptoms, not trying to figure out what is causing the symptoms. I have long held the belief that you get sick for a reason, because your body is out of whack. I have also come the startling realization, after myself and my sister being diagnosed with auto immune diseases really close to one another, that perhaps my mom was not sick "all in her head" as I originally thought. I thought she had depression, and some other medical issues, but now I really think that she may have had an undiagnosed auto immune disease. Shame on me for being so critical of her.
